Most popular catering sides

I know there are a ton of variables to this question but here goes. For a catering of simple sides like potato salad, mac salad, coleslaw and beans. Every guest won't take a full portion of every side i know but with 3/4 different options. Has anyone figured out what is typically most popular to make more of versus items that are less popular to make less of with those options. I know these items are usually cheap ingredients but it's lousy to waste time making too much of something that will be leftover.

Anything potato will go fast. Beans generally do too. Veggies sit a little longer.

This is definitely going to be region specific a bit, though. Slaw would go a lot faster in NC than it will here. My guess is Potatoes are quicker movers out here than where you are in Cali. Especially when we cover them in cheese, and such.
 
There are so many variables to this that there is no clear answer. For instance, how many sides and what sides will determine amounts consumed. Mac n cheese and coleslaw will see 6-7oz of mac and 4oz of coleslaw consumed potentially but ass beans and potatoes and you might only see 2oz of coleslaw and 3oz of beans consumed. The same menu on a different crowd can also yield totally different results.
