Buns were cooked in the oven the burgers cooked on a cast iron griddle on the gasser.

Never thought of putting brie on burgers...that sounds great! Use to put cream cheese slices on burgers back in college. Was okay but brie sounds 10x better.
I applaud you making your own buns, but I can't stand brioche for hamburgers...find them way too sweet. Same with pretzel buns.
Unbelievably good looking burgers and buns. Outstanding!
