Friend: I’ve got a really nice whole beef tenderloin. I’m going to cut it in half cook 1/2 on the pellet cooker and one half on the SOB. Low smoke high finish on pellet, good sear then offset on SOB. What’s your favorite way to cook tenderloin?

Me: medallions smashed flat then chicken fried covered in green chile gravy.

Friend: I’m serious

Me: me too

Friend says he has to go and hangs up

30-35 minutes later the phone rings

Friend: tell me about how flat to smash and this green chile gravy

Another needle and the damage done
 
That is one thing I cannot get right around here - chicken fried steak with cream gravy. The green chiles would be a plus.
 
This is a bbq forum folks. I've asked the mods to remove this thread.
 
I think this could be settled by seeing a nice thread about a fried, smashed fillet and green chili gravy
