Not So. They will feed on scraps on bottom - Esp. when Sandbass n Stripers are whacking Shad topwater - but will Eat anything in any part of the Water column from top to bottom. They’ll hit frogs, snakes, birds, insects etc on top water. They will hang out near the bottom to ambush prey above them - kinda like sharks do. I haven't skinned a catfish but I own catfish skinners because of bbq. I have fully broken down whole fish a bunch of times from the asian market so that concept isn't foreign. Mostly just the catching!

I've grilled catfish before but I always put it in a foil boat with butter and seasoning so it wouldn't crumble through the grate. As far as catching them I've always had the best luck with using bait that is common to their diet. Small minnows, bluegill, skip jack, etc. I've used the stinky dough recipes and I really don't waste my time with that anymore. Those big river catfish know what they like. I guess the most effective bait I'veused that isn't water related is a catalpa worm. That nasty black gook that comes out of those worms, catfish love it.

Well I learned something new but in my area I haven’t ever had luck catching catfish doing anything other than bottom fishing. In our river the water is anywhere from 15 to 30ft deep. How would you fish 1-4ft off the bottom there? Drop fishing or anchored off? With a cork or not?

Vary leader size and depending on bait size you might use 2 floats. Can also run a 3 way rig with long leader and float but can get jumbled casting.
Bank or boat. Sitting still or drifting. If you’re not getting bites - try closer or farther from shore, vary your depth in same spot etc......
slip bobber rigs let you vary depth also....... https://www.youtube.com/watch?v=NDnsjOOjyD4

We used to skin them, then started doing it with electric filet knife. Put the fish on ice asap, makes the skin tougher. Fillet like you would a bass or other fish cutting next to the spine. When you flip the fillet over, use a back and forth motion holding the skin, while moving the knife back and forth also. I usually keep my knife at about a 30 degree angle. If any skin is left on the fillet, just hit it with the electric knife. It should come right off.

Well ain’t that cool! I have never thought to add a bobber. I have always basically used the Santee rig but without a bobber.

Dead Calm Water is usually Worse. Waves Oxygenate the Water getting Fish Active, waves n oxygen stir up the bait fish getting fish Excited. I’ve gone out to the lake before towing my boat in the water was smooth as glass - I turned around and went home.........

Calm water on the edge of moving water Or waveguide water can be good because the catfish will wait in the calm water right on the edge and ambush whatever swims by

Fishing for smaller catfish eating size you can chum the waters with sweet corn or dog food or a range cubes from the ag store get 20% so they will sink and then they start coming apart in the water and chums the area . can bring smaller catfish in or get catfish in the area excited and feeding
Chum an area and give it about an 1/2 -hour - and don’t want to chum too heavy or they’ll just fill up on your jump

For grilling fish over a camp fire/bbq a fish basket comes in handy, keeps the fish from falling through.
