So 2-3 times a year I’ll have wild caught Alaskan King Salmon overnighted from a cool little shop in the Seattle seafood market. Special occasions. Mostly I order it fresh and smoke it myself but occasionally I’ll get their smoked, which is smoked on alder wood and it’s great.

I’ve just about perfected the technique but I can’t quite get there without the alder. It is a great, subtle smoke.

Does anyone have a good source for getting this shipped? I’ve seen some chunks available but wondering if there is a source for splits?

Alder is a very traditional wood for salmon and other species of fish. Planks and chips are still available.... but check out the selection of A-Maze-N flavor pellets.....Todd sells some options for smoke generators also.

That said, apple is the next step for fish, and it's a good wood for chicken +.
 
The website for the woodshed, located in Orange County, says they sell it. However, I’ve never gotten wood there before so I don’t know what their supply of it is like or if they would ship splits across the country. I know this isn’t much help, but if you literally can’t find it anywhere else you might want to look into it.

I cold smoke salmon with alder too. Sometimes I use a cottonwood blend too. It's a light smoke.
Can't help you with finding it in your area though... sorry!
 
I get my alder from a guy who makes custom cabinets. I get the scraps from all stuff they cut off and can't use (untreated, not finished). I'd give a call to a cabinet maker in your area and see if you can get it off them. It's kind of nice because the scraps are so small so you can cold smoke with them really easily. Make a new friend, give him some salmon when you are done with the first smoke and you'll have a supply.
 
Thanks everyone for the thoughts and ideas. It’s not common in my area. If I can’t get splits I’ll try the anazenprpducts third eye suggested. I’m trying to get ready for a stick burner but those pellets would do nicely on some fogo on the WSM. Happy weekend to all!
 
I know this seems a bit odd, but I was also looking for alder to smoke salmon many years back. I tried tracking it down and kept getting links to wood shavings used as bedding for guinea pigs and hamsters. I checked the bags at a local pet store and sure enough, alder. I picked up a bag and used the shaving for smoke. Worked great for me and wasn't too expensive either.

Before i found a local supply of fruit wood chunks, I used to purchase from "do it best". A co-op of local hardware stores throughout the US, that use a common supplier.


You simply add the items you want to your cart, pay for them on-line and within a week you can pick them up at your local participating hardware store with NO shipping fees. Go to the website and see if you have a local store that participates.

Fender uses a lot of Alder, maybe check with local guitar makers for scraps

I should have posted this a few months ago. Our firm just helped Taylor Guitar become an employee owned company through an ESOP. There was a lot of wood laying around. I never envisioned it powering my smoker 🤪
