So 2-3 times a year I’ll have wild caught Alaskan King Salmon overnighted from a cool little shop in the Seattle seafood market. Special occasions. Mostly I order it fresh and smoke it myself but occasionally I’ll get their smoked, which is smoked on alder wood and it’s great.
I’ve just about perfected the technique but I can’t quite get there without the alder. It is a great, subtle smoke.
Does anyone have a good source for getting this shipped? I’ve seen some chunks available but wondering if there is a source for splits?
