PBC Steaks
Has anyone cooked steaks or hamburgers on a PBC? What method did you use?

I have done a tri-tip (hanging), which isn't a lot different from a steak. I have to say that I haven't used the grill grate yet, as I have a Weber OTS which I prefer for grilling.

Did it have a nice sear but still med rare? I am almost afraid to try it with or without grill. I guess I will use my gasser. I have t-bones a little over an inch thick,

On a seroius note I've done tri tip and tomahawk steaks on the PBC and they turned out awesome. I've never cooked steaks on the grate partly due to the cuts (Tri tip,tomahawk) being large. I wouldn't hesitate to do smaller cuts of steak on the grate though or hanging for that matter. As far as how rare you want it cooked it's up to you. I first cranked the lid open to get it screaming hot which seared the steaks then I closed the lid for it to cook. You don't want to keep the lid open all the way through obvisouly to not burn you r steaks. I've cooked steaks on the PBC before but I lifted the charcoal basket with a hollow tile block because its too low to really sear steaks.

I would suggest not hanging the burgers, though I will be hanging a fattie this weekend using a device of my own making!

Finished
I cooked the T-Bones to 130 IT. The little strip steak was for the wife. She likes hers well done so I left it on while the others were resting. I would have liked a little more sear. The steaks were very good though.
