I've been craving a nice porterhouse for a few weeks.
None at Kroger.
None at Costly-Co.
None at the closest boutique butcher shop.
Go to the old stand by. It's just a bit of a drive.
The lady behind the counter digs me out a great looking steak!

Wife is still a bit tender from dental surgery a couple months ago, not sure she's ready for a steak.

How about some salmon? I ask.
She says perfect!

Porterhouse gets a 50/50 blend of Carne Crosta and Santa Maria.
It rests until the sous vide gets to 126°, then into the hot tub for 6 hours.

Fire up the kettle with KBB and some pecan chunks.
Get the grill grates scorching hot, hit them with some evoo, then the salmon.
As soon as it's ready to flip, toss the steak on direct.
A couple turns and flips, and everything is ready!

Baked potatoes and wild rice were the sides, but they didn't make the photo session.

Won't be needing any dessert tonight!
