Time to smoke 40 pound whole hog

I am picking up a 30-40 pound pig tomorrow to smoke on Fathers day in my Mixon H2O.

I am planning on following Malcom's recipe with the injections and rubs.

I am thinking about smoking around 250 degrees, which means temps from 225-275 on my mixon smoker.

Any idea how long it will take? I have seen suggestions from 3 hours to 7 hours which is a huge range.

I'm no expert, but I've cooked a few bigger ones. If it was me, I'd budget 6 to 8 hours total (1 for prep and to get the smoker going; 4 to 6 for cooking depending upon method; and 1 for resting). Post some pics.

Butterfly or racer?

I have never cooked racer, but butterflied hogs cook WAYYYY faster than you'd think they would.

60-70 lbs ~ 6 hrs.

I was thinking about racer style, but am open to suggestions.

I get it when a 12 pound pork butt takes 10 hours, but a 40 pound pig has to be a lot thinner all over.

I fought temperature the whole time as it was a rainy week and some of my wood was wet. My target was to range between 225 and 275 as well, but ranged between 200 and 300.
