What to cook low and slow

Hi Guys
After my long discussion on temps I want to get back out there
All I have slow cooked are brisket and pork butt
These are fine foods but what else is there?
What other meats can be cooked low and slow
I really want to practice

Chuck, beef and pork ribs, beef clod, whole hog....

You can cook lots of things low and slow....just for less time than a brisket or a butt... if you are looking for a cook over 5 hours, then you are fairly limited on cuts....
 
I just did a chuck that was awesome. I did it just like a pork butt. I usually pull it, but this time I sliced it and it really was good. Country style ribs are next on the list.
 
Ribs... at 275*.

Might do a pork roast

If the pork roast isn't from the shoulder, you generally want to cook it only to 140-150F. So there goes the slow.

Pork belly roast could be interesting though, brought up to ~190 IT.
 
Think of your cooker as an outdoor oven. Anything that can be cooked indoors in an oven that size is fair game.
I used to stop at the 24 hour store on my way home from work and pick up marked down meat. I'd then wake up the next day and try to figure out how to cook it in my kettle. The Joy of Cooking was my friend.
This was before this site existed. Or the Internet, come to think of it.
