^^^ this, I won’t batt an eye over grinding up some “steak” cuts for a burger, especially when they’re cheaper than “traditional” burger grind fodder. I often find ribeye priced the same or cheaper than skirt or flank and will use it for fajitas instead - and it’s way better for that use case, IMO. Good in = good out.

Will have to try that knife mince method sometime. Kind of a drag to bust out the grinder for a pound or two job, when it’s the same amount of cleaning for 2 or 20lbs of grind. I imagine the less than uniform shape lends itself well to a nicely seared burger.

Wow, 5.99 for ribeye, That 6.97 Australian so roughly 12 a kilo
Thats as cheap as any beef here.
I would grind it as well. I am lazy so i would use my blender

I feel like I don't eat enough burgers.

Killer prices on the beef. I picked up chuck roasts for 3.99/lb last week, but I haven't seen ribeye for less than 9.49/lb.

Did you have any issues with the burger not wanting to stick together? Doesn’t look like it in the pictures, but seems like chopped wouldn’t stick together as well versus ground.

My local Kroger runs sales seemingly around once a month at around the price on various steak cuts. Most often ribeyes, but sometimes strips or t-bones. Actually used to see it around $4/lb pretty often before corona virus... Might have to give it a try sometime. Admittedly, I might have to wait until it’s strips or T-bones though, haha.

Looks fantastic Sako! That mince method is similar to what they do on some kebabs right? Might be time to try that method with some skewers and minced onion mixed in!

I would have never thunk of that. Ribeyes are my favorite but, for that price at least if it was around here it would be more than likely tuff. So good call. Now I want to give that a whirl but not at our $10lb
