Default MSG in homemade rub

I’m not opposed to MSG at all. I want to add some to an SPG homemade mix but I am a little unsure how much to add. I usually add a VERY small sprinkle when I season something.

My spg is 2 parts salt, 1 part pepper, 1/2 part garlic powder.

How much msg should I add to that?

Are you going to reduce the salt and add msg, or just add msg to the existing ratio? Given that most people find msg more "salty" than salt, unless you're trying to make the rub more salty, I would reduce the salt and replace it with a slightly lesser amount of msg and see how that does.

Going by your rub ratio, I would replace 1/4 salt with MSG.

It's not about a amount you add with a measure.

Combine the rub and weigh it. Add appox 1 to 1.5% MSG at a maximum.

Taste and test. That will probably be right. Best to do it in metric if you can.

Cheers!

Nah, us old farts know better. It's all the Millennials with the made-up gluten issues that think that.
