Please accept the 1st pic as my official entry into the "Wood Fired" throwdown.
I carved some nice steaks off of a 22 pound rib roast that I just couldn't pass up at $4.97/lb. I smoked it at high temp till the internal temperature hit 120 degrees. After resting, it was perfect.

Thanks to Rec Tec shipping the Wyldside a week earlier than they said the would, and mother nature cooperating with a beautiful day I was able to enter this throwdown!

Here it is in all it's newly assembled shinny glory!



Here's the first fire, running with hickory logs. Hopefully complies with the requirements for a fuel shot. (Please ignore the green pool, still too cold to open it for the season!)



And the entry photo: Tritip, pretentious peppers (shi****o) as my wife calls them and some leeks.
