Default First cook on vault & burnt ends

So it was my first cook on my new to me vault coming from a stick burner. I ran about 275 for around 7 hours on a brisket. It came out good but no smoke ring like I am use to. I tried to make burnt ends for the first time so I cube them up with some sauce and rub and back on the pit for about 1 1/2 more hours. I am not sure if I didn't do them right but I didn't like them that much, but I hate fat so that chunk usually goes in the trash. Here is a pic of them and any advice is appreciated. Thanks Michael
