I've made pulled pork tamales. Mix meat with sauce of choice. Everyone loved them, and they froze well.

Already mentioned but we do the enchaladas and pizza with the left over pulled pork. I also like it with some veggies in an omelet. Sounds strange but it is really good on toast with peanut butter.

Thank you all!!! I haven't been on here in over a year and I'm falling in love with this forum all over again!!! I just cook for my girlfriend and I now so even a small pork butt causes a lot of leftovers and I want to get creative with it so I appreciate everyone's ideas!! She's gonna love all of these ideas!!!
