What are some good ideas for pulled pork leftovers?

I use a lot of pulled pork leftovers. One of my favorite uses is pulled pork chile rellenos..(stuffed chiles)





or pulled pork n tatoe crust pie..





also pulled pork posole...

Lasagne, nachos, stuffed peppers, hash, sandwich melts. But I really do like them in enchiladas that have been mentioned as well. Here's some I made recently
