Coolering Problem
The problem being I have no cooler. My son raided the shed and took them to the beach this weekend. I put a 13.5 lb. brisket on about 10:30 last night. (pron to follow) I was thinking I could just wrap it up after it's done and pop it in a 175* oven for a couple of hours to rest. Any other sugestions?

If you wrap it up well enough with plastic wrap and thick towels or whatever, it may not be necessary to turn the oven on.

Foil it and wrap in a couple of old towels and you wouldn't even need to turn the oven on.

175 would probably keep cooking it slowly. Pop it in a 140 degree oven and it will hold fine and stay safe.

Looking good.
I don't usually use a cooler. I wrap my cuts up tightly in foil, two layers. Then Saran wrap. Then 3 large beach towels. Plop them on the counter while everything else is finishing.

when my cooler is busy, I put it in a pan or dish, cover it with plastic and wrap it in a moving blanket.
