It’s not as if a possible 2 hour rest is gonna hurt them... lol. How often did you find yourself spritzing these SR’s?
A lengthy rest, even up to 4hrs or so, is certainly better than dealing with antsy guests. I’ve read Aaron Franklin’s book, and, given he has specially designed holding cabinets, I’m pretty sure I recall that brisket and butts come off at like midnight and get held until lunch service.

It’s hard to say on exact frequency. I try to avoid unnecessarily opening the lid, but I had to 2-3 times to reshuffle the coals and took those opportunities to spritz while open. Then maybe another 2-3 other times for a total of 4-6 spritzings in the 9hr timeframe on the drum.

Thank you everyone for all the support! The brethren brotherhood is no joke

Great looking bones, and valiant fight against a nasty storm front.

Thanks for the reminder on why I need to get some more of these shorties and smoke them again soon.

I love beef ribs. Those look fantastic. Great thread and great cook. Way to roll with the weather punches. I need to get some shorties soon, been too long.
