Today my brother in law stopped by on his way home from deer camp and dropped off a beautiful little wild piglet, skinned and split length wise. Any ideas on cooking on the smoker? I'm thinking about brining it then cooking it until it's picking/pulling temp, wrapping in the last portion of the cook to keep from drying out (and maybe putting some lard in the wrap with it). Thoughts, other ideas, recipes you've had success with? Much appreciated.

If its small enough to fit in the oven, I would roast it there. Salt and pepper the night before, inject with mojo and stick with garlic. Roast covered for at least half the time. They tend to be lean and will dry out if not covered. Baste often after removing cover.

I would inject it and throw on smoker at 275. Depending on weight may want drop it down 225-250 if small
