Default Mini loaf pan chicken practice

Quick question.
This is the first time to do thighs in a mini loaf pan. The birds went on the UDS at 9:40am. After looking up time and such from older posts, I'm a bit confused. After cooking for an hour at 300* do I pull them out of the loaf pan and cover or cover them in the loaf pan or put the loaf pan in a foil pan and cover? Thanks in advance for the help.

If you did not scrape skins then you need to add some liquid in the form of broth, butter, or using their own juices if enough has built up and cover to help with the bite. In the loaf pan or move to half pan if you like.

Practice, practice, practice. Practice different time lines and see what works best. The best thing is at least chicken isn't too expensive.
