Greetings,

I recently picked up a Deep South Mailbox smoker and I am very impressed. When researching this particular smoker I couldn't find much online, so I guess I am here to answer any questions for those that may have them.

For reference, my previous smokers were a very early model treager, Yoder YS640, Backwoods Party and Backwoods G2. As much as I loved my backwoods, they simply seemed to rot from the inside out. They were stored covered, under a patio their whole life, and the inner panels rotted away and the bottom of the fireboxes have holes in them. I hate it, because the rest of the smoker is in good shape, but I digress.

So I went out to find a similar style cooker (with a small footprint and water pan to save me from myself) and stumbled across the mailbox. Fortunately, there was a store near me that carried them so I got some hands-on time before pulling the trigger.

1. It's built to last. Everything will eventually rust and breakdown, but this will last a long time before that happens. made of a frame of 2x2 square tubing and 12 gauge steel that is fully welded, no screws or rivets. The slide out trays and fireboxes are far superior to mass produced cabinet smokers.

2. They use automotive paint which will help keep rust at bay

3. For as heavy as they are, they roll just fine on my patio and on/off a trailer. Just need a friend.

4. Its made to be a grill and a smoker (move the fire box to the second rack and grill on the top rack) but I will only ever use it as a smoker.

5. The initial burn-in had excellent results. With a steamer tray on the heat deflector I was able to achieve temps within 10 degrees of each other on the three racks with little effort. Did it at 250, then choked it down and held firm at 225, easy.

6. You can easily cook 6 packers, 12 butts, or 12-15 racks of ribs, no problem. I don't care to have more friends than that.

7. Ive only done one burn, but I think this beast will be a charcoal hog. Doing a brisket and 4 racks this weekend so ill have a better idea then.

Learning curve though, I’m so used to my backwoods that was flush against the wall because it opened like a fridge. Well, put this in the same spot and opened the top, which opens like a grill 🤦🏼*♂️ First scratches on the ole girl
 
Sure is a pretty one! Keep us in the loop on the functionality and design. I recently came across the mailbox and am intrigued but didn’t know of anyone who had one until now.

I do like the looks of this. I will be interested to see how the charcoal usage goes. Looking forward to the updates. What are the actual dimensions of the grates? Something is off on the dimensions on their website. Says exterior is 37x32. Seems like the grates would be larger unless he is counting the handles. Just curious.

I know you said you won't be grilling, but I like that you can grill on it.

I think I'd use either the heat deflector or the ash pan as my coal rack and skip the fire box so you can get the full edge to edge charcoal coverage.

Would be great for tailgating during the USF vs. Memphis football games. Go Bulls!

Very true! Suppose it’s nice to have the option of needed.

Well when we’re the only ones left in the AAC we will play a lot!

Grates are 23.5” x 19”

Cooker is 28”w x26.5” deep

Not sure where those exterior numbers are from either. Handle to handle is 41”w
 
I like it, it’s basically an insulated version of American Barbecue Systems’ Bar-be-cube.

Grates are 19x23. You’re right about the 37x32 measurements. Even with handles it’s not that big.

My cook this weekend will now be a brisket, a butt, pork belly, and 5 baby backs. Will push it to the max! I’ll keep track and see how much fuel I end up using.
