Not necessarily restricted to BBQ/braai grill


There's a music festival in the area in about 2 weeks time.
It's on an island with no electricity and it will be hot.
We don't know how many people there will be. I suppose 150-200 (the organisers are thinking over 400, but I don't think so)
I've been asked to do some form of food and I am looking for some more ideas.
I don't want to hand out plates, knives and forks as they will get lost/stolen/broken and I don't want to use paper or plastic plates.

The easiest I came up with is hot dog roll, with pickles and sauces. I can heat up the sausages in a pot of water on a gas stove. Easy, but a bit boring

Kebabs would be nice, but the amount of work is a bit daunting and I don't want to use chicken in the heat we expect, neither pork and beef is far too expensive. If I would go that route, we'll need a bbq and charcoal (which isn't a problem).

I've been thinking of empanadas as well. I can make them in advance and serve them cold?
Heating up would be a bit tricky on the grill?
Or little calzone pizza's (basically same idea as empanadas)
Or foccacia?

There are a couple of other people doing food and they will be doing different curries and burgers, boerewors rolls etc

So, I am asking for some ideas for simple food that doesn't need a plate/knife/fork etc. Preferably served cold, or easy to heat up on a grill.
And it got to be affordable and not too labour intensive (not asking for much, am I

empanadas with Chutney depending on the meat used
Hot Dog(depending on the sausage used) would go great in a Spanish empanada.
My neighbour serves them up during summer cold.
 
If there is food being handed out. Not sure how you would do that without napkins, plates, bowls etc.
Anyways, slice, marinate and smoke some jerky. Alot actually. It is a bit of work. But always a big hit.
Smoke some mixed nuts. Hand out in small baggies.
Smoke some fatties. Pre-slice and reheat real quick on a portable grill. Have some real maple syrup to add if so desired. Quick, easy.
Smoke some cheese if you are able. Get the cubed stuff to make it easier. Have some crackers and hot sauce.
Chicken fingers. Easy to reheat, again very quick to keep up with demand. Or put in pan with broth/butter/onions and re-heat on site.
Any seasoned/grilled veggies. Quick to re-heat.
That's all I can think of right now.

Turkey or chicken or emu (!) drumsticks are perfect food-on-a-stick. Tacos. Corndogs. Pizza. Spring rolls. There are a lot of one handed eat while you rock foods out there.
 
Variety of fatty with varying degrees of heat and flavor. Bake up a gob of biscuits ahead of time, warm up the fatty slice throw it and a piece of cheese in the biscuit and send them on their way.

After thunkin on it for a minute, Sams has premade biscuits several dozen to a flat that are really pretty tasty.

I think if you did empanadas, you would have a great way to go. You could also do kolaches or sausage balls that use bisquick, sausage and cheese are easy. I have seen pigs in a blanket with little smokies and crescent roll dough go like wild fire. I like to do potato boats as well. I second the spring rolls too.

On topic: A fond memory from high school, they would grill us up some hot links, then just stab one onto a wooden skewer along with a Hawaiian roll.
 
Thanks for all replies.
I made a test batch of empanadas yesterday. Basically to test the dough and to see what they would taste like when they are cold.
So far, I'm happy.
I'm thinking of making a variety of fillings so there will be a bit of choice.
The dough will either be "normal", have some added paprika or turmeric, so that's 3 types and I will be able to tell them apart ;)


I may also do toasted cheese sandwiches and/or salad rolls (tuna salad/ham salad/egg salad or something like that).
Quick and easy and should do well in the heat.
I think I may drop the hot dog idea as there are already boerewors rolls on offer, and I think most people would prefer those


We'll see how it goes :)
