Question What to do with leftover beef plate ribs...

I recently smoked up some beef plate ribs:

As much as we tried to polish them all off, they were just too rich and ended up with a couple leftover nuggies...



After cleaning them up (and snacking during the process), the result was this pile of goodness...



Hmmm, what to do now...

Then the light came on (still no one home though). Leftover over beef ribs and eggs...



Requisite fork shot...



They did not suck...

That looks delicious! When we have leftover smoked beef, it almost always becomes beef stroganoff. I would have also thought about using that in an omlette, or some breakfast tacos.
