I’ve made these before and since there is a “Make it Better With Bacon!” Throwndown going on here: http://www.bbq-brethren.com/forum/showthread.php?t=233551 I decided to make these again.

I took some U13 shrimp and split them as much as possible and then filled the cavity with sharp cheddar cheese, then a slice of jalapeno and then wrapped them in bacon.

I place them on the preheated (to 300) kamado for 5 to 6 minutes per side.





Let them cool for just a few minutes and then plated them up with some cilantro garnish.



These are sooo tasty.

Dang! I haven't had my first cup of coffee and want some of these for breakfast; they look delicious.
 
Man those look good!! I havent cooked them in a while...time to break it back out. Anyone have a recipe for some Mexican butter to dip them in?
 
Awesome plated shots! Next time I do shrimp, a few are going to be Atomic shrimp appetizers for sure!
