Planning on doing 7 Cornish hens on my drum. It appears like it is a hot and fast method? Any tips? What temperature, and what kind of time should I expect?

I would think it should only take about 45 mins or so if you can keep it above 300... a little higher if you're wanting crispy skin.

I did a couple on my kettle last weekend, did the snake method, starting one end with a dozen briquets. I would guess I was around 275*, it took 75 minutes to cook them. I didn't have any probes, I just cooked till the legs felt done when pulling on them. I cut to the bone on the breast and the juices were clear.

They came out nice and juicy, well do again!

I brine em' for a few hours and smoke them for 30-45 min at 225, then run it up to 325-350 til they hit 165 or so. I also spray some butter spray on the skin when I raise the temp. Usually takes 1.5hr altogether. Family loves it.
