Tonight's dinner: loin back ribs!
Simple Rub of Salt, Pepper, Garlic, and Brown Sugar.

Cooked them hot and fast tonight.
325-350 for 4 hours. Used HEB Central Market Oak Lump with a few mesquite chunks.

Wrapped one rack after 2 hours. Wanted to see the difference in texture with wrapped ribs versus Ribs done all the way with no wrap.

Made a glaze for the ribs:

1/2 c water
1/2 c Sugar
1/4 c Ketchup
1 tbsp mustard
1 tbsp apple cider vinegar
1 tsp salt
1 tsp garlic pwdr
1 tsp chipotle chili powder



So experimented with glazing half of each rack so I would have the following:
1 half rack naked
1 half rack naked plus glaze
1 half rack wrapped
1 half rack wrapped plus sauce

Really nice ribs! Which rack had the most pull back on the bones? Kids are adorable. They look like they enjoyed the meal.

Thank you! Surprisingly the wrapped ribs had the most pull back. However, my kids said they liked the naked ones better. I think they were also more tender.

Ribs look amazing and the smiles on your kids tells me all I need to know, that they were delicious.
 
One thing I forgot to mention last night is that surprisingly, the naked ribs were more tender. They texture was slightly different obviously. I think for now on I plan to cook my ribs with no wrap and let the fire do its thing.
