Turkeys in pans or no?

I’m filling up my smokers with turkeys next Wednesday. I have room to use pans but wondered if that effects how they cook. Do they sit in liquid? Does smoke penetrate well? I know it would make cleanup a breeze but im selling these and want them to be really good.

We usually do around 20 turkeys for thanksgiving. Always use pans to collect the drippings, which we then package and send home with the turkey to use for gravy.

That's excellent service right there! Need the juices to make a good gravy.
 
They're in pans in the oven.

Always use a rack, whether in the oven or smoker. Drip catch pan in the smoker if I feel like farting around with it.
 
Ive done both, if using a pan i throw bug chunks of celery, onion and carrot to elevate the bird our of the fluid and then strain it out to make a gravy.
