Default Recteq and Beef ribs

Ribs just went in the 590. I plan to leave the ribs at 180 for awhile. Seasoned with modified Montreal steak season (added more pepper to the shaker). Hopefully they turn out great!

A couple hours in. Tossed some wrapped jals with a few being pimento to try something different.

I was trying it out to avoid so much grease on the drain pan. I don’t really like the smell once it’s burning when I crank it up. Just set to 275.

Chugging along. Turned the heat up pretty high has they do in these Tx bbq joints. Down to 225 to go into the resting state. Right now internal is 195.
