Beef Shins ? Cankles?

I watched the whole video; NICE! that shin, I want one...or two.
I even subscribed to her channel. I like her energy and enthusiasm. Thank you for the post and link!

Impressive video. So... a beef shin (shank) is the equivalent to a pork shank, which are somewhat available. The video mentioned a combination of braising and smoking was used to cook the beef shin which is the same drill used for a pork shank.

Full pork shanks are not that expensive and pretty tasty, but I'd like to try out the beef version.

This one was served in a South American BBQ restaurant and it's upright in a bed of garlic mashed potatoes.

Yeah, it looks like they are cooking a cut more akin to a leg of lamb, only bigger. A lot bigger.

But this has made me get a couple nice lamb shanks out of the freezer for tomorrow night. I get so much inspiration for meals here. Tonight is Chilean sea bass or I'd do it then.
