Garlicky Shrimp with Peanut Lime Marinade
I once again found a great recipe in the Weber "Recipe of the Week" emails I get. Real easy and quick but great when cooked on the egg.
Marinade is easy to make in the blender and includes peanut oil, sesame oil, soy sauce, sriracha, ginger, lime juice and zest, garlic, basil and peanuts Marinade for 20-30 minutes I cooked them on the grid around 400 degrees (sorry no pic) and flipped after 3 minutes. Squeeze some lime on them after they came off. Served them up with some brown rice and sautéed pea pods. (Sorry about that last pic!) Outstanding and so easy to cook. Looks great to me. I'm always trying to fine a different way to do shrimp. It's just pretty hard to beat a simple Olive oil and garlic cook, IMO.

I catch shrimp off the seawall in the spring when they run (spawn). I'm looking forward to next spring now that I have this recipe, unfortuntley I"m out of shrimp now. I see Jeanie (Cowgirl) saw this, she had freshwater shrimp from what I remember.... hopefully she let us know how it turns out for her too!!
Thanks for the heads up!! RMR |
