Decided to work out of parents back patio today instead of office. Dropped kid off at daycare and got computer setup with espn on outdoor TV. Temp was and still in low 70s in NE FL which is rare. Not cloud in sky and looked up and saw cover on the OkJ Longhorn. Was thinking this just isnt right. Pulled up local ad for grocery stores and saw Winn dixie had spares BOGO. Off to store and after slight trim had quick rub down with meat church holy cow and john henry pecan rub. Pit is fired up and waiting for coal bed to develop

Going no wrap at 275 (most of my trophies from comps are this way) one will get TN red and other a local mustard sauce.

Maintained 275-300 and finished in 3:15. Im really liking a beef style rub on ribs. Gets away from the super sweet Unusually do for the fam. Also this is first time using mustard sauce and im a big fan. Will be doing again

Ribs look awesome. Do you spray if cooking unwrapped for the whole time?
 
Fine lookin pork work.
Ribs on my smoker right now. Hope they turn out as fine as those. :thumb:
