Got 10 thighs in some Stubbs chicken marinade and wanted to smoke them with the Bandera for supper. Any suggestions for tender or crisp skin? Not opposed to crisping at end but I just didn't want the skin to come off in the first bite. Wanting to glaze. Skin has been trimmed already to just hang over sides some, not wrap completely around.
