So my wife said those magical words Sunday. "You're on your own for dinner Wednesday." Since then I've been planning this quesadilla.
I started with a chicken breast dusted with seasoning salt and chipotle powder.
Then I added some green pepper and jalapeno
While that was cooking, I started sauteing onion and corn
Back to the chicken to glaze with a bourbon apple sriracha glaze
Chopped the peppers and added them to the saute
Tossed it all onto a tortilla with a generous helping of cheese
Plated with home made guacamole, sour cream, and salsa
