Meat expiration dates

I think I kinda know the answer but would rather ask. I have 4 packages of brined corned beef that I picked up around St Patrick's day. The use by date I just noticed was 7-2 of this year. What would you guys do? Just open it up our of the package and do the smell test? Really craving some pastrami.

Me personally? Smell test lol. The salt content is high enough in the brine that I would think it should be ok!

no way that its bad a month after...agree smell test but I would be shocked if it wasn't good to go. If you don't want to do them all now...toss them in the freezer. They perform just as good out of the freezer. When RD runs the St Patty day sale I load a stand up freezer - bout 8 this year. Smoked two right away, froze the rest. Then smoke two at a time, freezing the result until I need to steam them for eats.

But agree - open one and smell...

No doubt, it’s pickled and pumped full of nitrates.... good to go I’d imagine.
