Grill grate steaks on a Friday

Starting to get the hang of timing using grill grates on steaks. Basic grocery store 1.5” grass fed NY Strip. Seasoned with Cosmos Cow Cover. This is a good rub.

Cooked 3.20 minutes per side at 550 on the dome temp using grill grates. Still prefer a reverse sear but this works. A little past medium rare.

Dang it. Once I got to the middle it was more Pittsburgh rare. I prefer stem to stern medium rare you get from reverse sear. When I reverse sear steaks with grill grates, I like to flip them over for the sear and use like a griddle. Still within the learning curve.

Oh, but the Cow Cover Rub. Really good stuff. And this is coming from a guy who prefers nothing other than coarse sea salt on steaks. This is tasty stuff. Deep flavor. Highly recommended
 
The flavor from the rub was incredible. Very deep but still balanced. Very impressed. Pittsburgh rare used to be how I ate steaks so it was all good. Next time reverse sear. Just a better way to cook a steak in my opinion
