Cascade Smokers Quedeville

Did a couple of cooks over the weekend.

Saturday did a small pork butt. Just some dominator rub from oak ridge. Turned out good.

Sunday I did a chuck steak. Only ate a few small pieces but was tasty. Did the oak ridge black ops in it

While that was cooking, I threw a chicken on the top rack. Turned out good. A bit darker than normal since I had some hickory chunks in the charcoal for the beef. Usually I just use straight charcoal for chicken.

Only downside so far to the chuck was only one bone and I have two dogs

Hey fellas, resurrecting an old thread, but wondering if the two Cascade Smoker owners still have theirs and how they like them? I just sent Rob my 50% deposit today on a full-custom Que Deville. Spent an hour and a half with him a couple weeks ago and finally pulled the trigger! It'll be 34" wide (vs the standard 22"), 5 racks, 2 shelf stand, and a bunch of other things. Anyway, I'll be sure to post pics upon delivery. Hoping to be cooking on 'er by July 4th!
 
I'm still using mine, in fact I use it 3-4 times a week. It's my go to cooker as I've gotten rid of my stick burner and pellet burner. I get stick burner results and it's about as easy to use as a pellet burner without the hassle of tending a stick burner fire and the lackluster wood flavor of a pellet burner. Your build sounds like it's going to be a nice one, be sure to post up some pictures when you get it.

Use mine all the time still. Zero regrets and has lived up to all my expectations.

Had a blast picking it up and talking to Rob. Bet you will, too.

Headed over to see Rob in Terrebonne to pick up my custom Que Deville! I'll post pics and update upon completion of first cook! Here are the options I chose & the pics that Rob sent yesterday.

She weighs 780 lbs., but we got her strapped in and made the 140 mile trip over the pass with no issues. Safe and sound at home now. Rob is an absolute master craftsman...this thing is incredibly well made! Spent almost 2 hours yesterday going over everything with me. Can't recommend Cascade Smokers highly enough.

That's magnificent and appears to be a functional work of art. I like the way everything appears to be at a good working height.
 
Thanks. That was part of it for me, since this is a "lifetime" smoker and I'm not getting any younger:). Charcoal box sits at about 36" and top grate is 57". That gives me 18" clearance for my cart rack, so I can slide my storage bin under that holds charcoal, wood, utensils, etc.
 
Great cook yesterday!

Loving my Cascade Smokers custom Que Deville! This thing is a tank and so easy to cook on and clean up. I built a "He Shed" for it because my wife insisted it was too big for the back patio (she may have been right). Need to wait another couple weeks to finish staining it to let the lumber dry out. Yesterday I did 3 racks of spares, 2 prime chuck roasts, 5 lbs. of pork belly "burnt ends" and 2 dozen chicken thighs. Once the temp's locked in it doesn't vary by more than 5 degrees or so...rock solid. Pics show the charcoal/wood chunk setup I used and we all thought it was about the perfect amount of smoke. I bought a mini-chimney to use for starting and that was just right. From the time I dumped the hot coals in and closed the door to the time I shut it down after running up to 325 or so for 45 min to burn off the grates was about 11 hours, and I used maybe 2/3 of the coals pictured.
