Have made many, this is my first smoked one.

2 lbs, beef and pork, way more bread crumbs than specified - the meat was really moist - eggs, Lipton Onion Mushroom soup mix, sweet Bay Ray's mustard based BBQ sauce, a couple eggs.

Never had the liquidity problem with meat loaf ever, and I have made this recipe about a zillion times. So I put regular bread crumbs, then panko, then once I ran out of panko I crushed up some crackers. Pro tip for the future: Don't pour the water in until you see how it is shaping up. So I put parchment paper under it on the rack and will trim the edges off before it goes in the PK.

Coated the top with a little Boars' Night Out White Lightning just for fun.

Chimney is working, plan to cook about 300. Any wood suggestions? I have hickory, pecan, cherry and mesquite.

Actually I already picked it, but it was the first bag I touched so....

Glad I made a good choice without knowing it. as they say 'even a blind squirrel...' :mrgreen:
 
Waiting - it's at 136 now, the PK humming along about 320. Anticipate eating about 7:30 EDT.

This is my first bag of B&B oak lump and I have to say it is almost all sizable pieces. Maybe a couple handfuls of really small stuff. Pretty pleased. Hope the rest of it is as good.
 
Nice. Pecan and cherry are my favorite woods...both smell like heaven.

I tend to use pecan more for poultry and cherry for beef, pork, and lamb.

Turned out good, but not enough smoke for me. That might be different on the leftovers tomorrow.

That is a very good looking meal! Remember that smoke is a seasoning. If you liked the recipe enough to do it again, add more seasoning next time. :grin:
 
That is the final product I was waiting for. Very nice!!
