5lb rack of short plate ribs on the MAK at 10:40 am. Mayo slather, kosher salt, and Oakridge Black Ops.

Thermoworks Smoke app says 173.8 degrees. Bark looking good, plan to go naked. Pull at probe tender and wrap in foil until time to eat.

Copycat "Salt and Smoke" Restaurant Mac and Cheese being brought by daughter and SIL. Will smoke the mac on the MAK for a bit.
