Caveman roasted some Serrano peppers. No bacon here.



And made a roasted pepper cream sauce.
Now when it comes to following a recipe I suck.
I used roasted Serrano instead of Jalapenos. I subbed sour cream and some milk for the mayonnaise. And when it called for olive oil I used some bacon grease. Some good choices for a great sauce.


Next I covered this chuck roast with bacon grease and then some Oakridge BBQ Black Ops brisket rub. Smoked with hickory on the WSM 18.


During the cook I basted the roast with melted bacon fat a couple times. Smoked it to probe tender with no wrap of any kind. Apparently with no pics.

When done I put the roast in a CI pan that had the bottom coated with more bacon fat. Rested with the lid on for an hour or so.


And when shredded it actually was a very tasty mix of bacon and beef flavors.


Meanwhile I put a loose bacon weave on a CI pan and dusted it with a no salt rub.


Bout done. Lookin good.


After a while to cool I filled my bacon bowl with corn chips, cheddar cheese sauce, Serrano sauce, shredded beef, red onions, and tomatoes.


The verdict. Bacon DID make everything better.
The Serrano sauce, the pulled beef, and the nacho itself. All were made better with bacon.

Probably the best nacho I ever ate.
