I never actually cook our thanksgiving bird and its a shame, but I do cook lots of turkeys. Whether you are smoking or roasting I alway brine it. I like to incoporate ingredents to go with the rest of the meal. Thing like cloves and oranges go good with the bird. A basic brine with flavors like those added make a good turkey.
