Stuffed Bash Fatty

Saw there is only one entry for the fatty TD, so a change of plans.

Stopped at the Texas sausage company in Austin to pick up some pan sausage as well as a few others for the Bash.

Stopped at the local HEB for the rest of the stuff. Fatty stuffed with cheese, green chiles and chorizo.

Coat of Porkmafia Memphis Mud. Barely got it sealed up.

Was actually my first stuffed fatty.

That would be a superb Fatty all by itself, but it is extra-double superb because:

1. It saved the sputtering Fatty Throwdown from imploding the time space continuum

Didn't really pay much attention, Jay's pit was running between 225 - 275 maybe. Temp would go down as we were adding/taking things off. I'd check the internal temp about every half hour, took just under three hours.

Had this been a hot n' fast cook, I wouldn't have had as much time for BS'ing/drinking with the Brethren.
