My first try at Georgia Brunswick Stew

I wanted to give Saiko's Georgia Brunswick Stew recipe a try.... It was so tasty. Thank you Saiko, it's a keeper!

I cut the recipe in half and made half a batch. :)

I used a smoked pork tenderloin
some grilled sweet corn
some of my canned tomatoes
Head Country dry rub
Billy Sim's Hot Q sauce
Cholula hot sauce
ketchup
cider vinegar
kosher salt
cracked black pepper
cayenne
butter
and water

I added the butter and let it simmer all day....

Then made some fresh flour tortillas to go with it...

I like to roll them out by hand... They usually aren't round, but I do not care. lol

I like hot tortillas slathered in butter, then rolled up.

Thats the kind of stew that can just sit on the stove all day. Looks awsome Jeanie.
 
Wow, that probably tasted better than mine since you used fresh grilled corn and your own canned tomatoes. That looks great, and I love the addition of the tortillas! I have a tortillas press, so I'm going to give that a shot next time.
And now that you have a base for Brusnwick, you can tweak it and make it your own. A lot of home cooks in the south use butterbeans along with the corn, but it's rare to find BBQ restaurants that use them.
That looks fanstastic, very nice job as usual! I feel honored that you even considered one of my recipes!

Saiko, I loved it! I'm not planning on changing a thing... your recipe is perfect as is! Thank you again for sharing it.

I go through a lot of tortillas, they are easy to make and taste so good hot off the griddle. Sometimes that's all I need... a couple of hot tortillas and a cold beer to wash them down. lol

Winemaster, the stew smelled so good simmering on the stove all day... I couldn't wait to try it!!
 
That really looks good Good thing I did not have a spoon or else I would have tried to eat it off the screen
 
I forgot to add the flour tortilla recipe...


2 cups flour
1 teaspoon salt
1 teaspoon baking powder
mix well then add
1 Tablespoon of lard (or shortening)
mix well then add
1/2 to 3/4 cup of warm water
I start with 1/2 cup of water, then mix in more if needed.

Knead into a ball and let it rest for 10 to 15 minutes

Tear off balls of dough and roll out to 7" rounds. The recipe makes 12 tortillas but I like mine bigger so I usually make 8 or 9 with one batch.

Cook on a hot griddle or cast iron skillet for a minute or so on a each side.


Store the tortillas in a plastic baggie until all are cooked.....they will stay nice and pliable that way. :)

They are easy to make and so tasty when they are hot off the griddle.

We swear by the fresh tomatoes, limas and corn (of course canned or frozen in the winter) at my place.
I actually think my mother in law would drop kick me if we used anything else....I'm 6ft and she's 4ft nothing and that scares me!:eek:
