Couldn't wait any more. Got spare ribs, pork belly, and beef cheek seasoned on the new T&K reverse flow. I have never smoked beef cheeck or pork belly before. This is the largest single smoke I've done, and I can tell my inexperience doing different meats at the same time. Hope it turns out for me.

Went to Lowes this morning and picked up Royal oak briquettes. Have some cherry wood in the basket and sitting right in front of the smoker. Way more fun than watch8ng paint dry.

Looks like you're off to a great start! Those T&K smokers look awesome

Congrats! That's a great looking cooker. Nice load of meat too.

So I don't know what I did wrong on the beef cheek, but it wasn't good. Luckily it was also the cheapest thing in the smoker. Ribs were good and the pork belly was delicious. Next week will be a brisket for my dad's birthday

What was wrong with them? Too tough? No flavor? Bitter?/QUOTE]

They probed tinder but was tuff when pulling. The fat had the consistency of a big snot ball. Thanks everyone for the kind words. I have a ton of pork in the refrigerator now. Next is a brisket on Saturday with pron to follow.

Wow, that's a beautiful smoker, congratulations!
Beef cheeks are a tough cut to get right, looks like all the other stuff was a home-run though!

Congrats on your new smoker....it's a beauty!! Also, GREAT first smoke, it all looked delicious!!
