What to eat on the first NFL Sunday of the season? Wings, of course.
Been in the fridge uncovered since Friday night to dry the skin out. Rubbed with Mad Hunky Hot Whang and then on the small egg indirect around 275* to start. Rockwood lump with pecan chips for smoke.
Temps climbed to 400* over the course of the next hour and a bit until I checked them. They were pretty much done.
Mixed up a sauce with equal parts Sriracha, honey, and butter. Tasted it and then added a decent unmeasured amount of more Sriracha and brought to a simmer. Dunked the wings in the sauce and back on the egg.
Let the sauce set up for 5-10 minutes and they were done.
Pretty good wings, skin was still pretty crispy, even with the sauce.
