Always used roundsteak. Season with a little salt and pepper (cracked) and tenderize. Coat with fllour, seasoned with a little paprika and more pepper. Dip in milk, or buttmilk if you prefer, back in seasoned flour. I grew up eating it pan fried so, in a heavy cast iron skillet heat oil just below the smoke point. Turn occasionaly until fork tender and done. Drain on paper towels and place over a warm burner on a platter if needed before serving.
