SC Style Mustard Sauce

Ok give me a ration for not coming around :redface: then if you'll answer me I'd be mighty grateful...

Sitting out Irene right now, got a butt in the fridge rubbed down waiting to go on the Egg tomorrow AM...John asked me for a mustard bbq sauce to serve with it...I've had them when driving through SC and liked them but never made one.

Anyone have one they LOVE? Keep in mind I will be without power in about 6 hours or so.
 
Roxy's Mustard Vinegar Sauce


1 cup apple cider vinegar
1/2 cup Yellow mustard
1/4 cup onion finely minced
2 cloves garlic pureed
1/2 teaspoon black pepper
1 tablespoon Worcestershire sauce
1/2 cup brown sugar
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon Tabasco sauce

Combine ingredients and simmer for 15 minutes, stirring occasionally.

For a smoother sauce, blend on high for a few minutes.

I just used this stuff yesterday with leftover Pulled Pork; put on top of "Potato Hamburger Bun' then slopped on some homemade cole slaw. These sandwiches cannot be found anywhere nearby.

South Carolina Mustard BBQ Sauce
1 cup Distilled vinegar
1/2 cup Yellow mustard
1/4 cup Dark brown sugar
2 Tbsp Ketchup
1/2 tsp Kosher salt
1/2 tsp Celery salt
1/4 tsp Granulated onion
1/4 tsp Black pepper
1/8 tsp Ground mustard
1/8 tsp White pepper

This recipe looks good John. we always keep some Roxy's in the fridge. We make it a gallon at the time. Good on everything from butts to hot dogs to ham sammies!!!
 
My whole family, on both sides, love mustard sauce the best. It is one of the few things we all agree on.
 
Search for soflaquers mustard sauce as well. It's my favorite, and I'm not a big fan of mustard sauce.

We don't do anything by Maurice because of his racist tendancies.

You can however get the exact same family recipe from Bessinger's BBQ or Melvin's BBQ. There may be a family rift (four different sibling restaurants), but they all use daddy's sauce recipe.
 
Matt's Carolina Sauce

Ingredients

  1. 1 cup yellow mustard (I used French's Prepared Mustard)
  2. 1/2 cup sugar
  3. 3/4 cup light brown sugar
  4. 3/4 cup cider vinegar
  5. 2 tablespoons chili powder
  6. 1 teaspoon black pepper
  7. 1 teaspoon white pepper
  8. 1 tbsp. Worcestershire Sauce
  9. 1/4 teaspoon cayenne
  10. 1/2 teaspoon soy sauce
  11. 3 tablespoons salted butter (not margarine)
  12. 1 tablespoon liquid smoke (hickory flavoring)
  13. 1/4 - 3/4 cup of water

Directions
Combine ingredients 1 through 9 in a medium size sauce pan. Simmer 30 minutes on medium-low heat. Add 10, 11 and 12 and simmer for 5 minutes, add water as necessary to make the sauce moderately thin, but avoid making it too thin. When squirted on pulled pork it should slide in to cracks and not pile up on top.

Modifications
This sauce has a tangy, mustardy flavor with a bit of acidity that comes through from the cider vinegar; sugar helps to moderate the acidity. It is absolutely my favorite sauce for pulled pork!.

As with any sauce recipe, feel free to taste as you go and adjust flavors to your liking.
