So Me and some buddies decided to get together and make a giant pile sausages today. I figure, if you're going to make a mess anyway, might as well be productive, right?

Here is pre fest.. I tried to have everything somewhat organized, even though I knew it wouldn't last



Here's a few of our sausages.. We did about 20lbs of Salamis for Richard (our dry curing chamber) We also did 5 lbs of Andouille, 5 lbs of Kielbasa, 7 lbs of Pork Texas Hotlinks, (a recipe of Bludawg's) 5 lbs of a Parmigano regiano white wine Italian, and 5 lbs of spicy Itallian

If you're thinking about it seriously, Will, check out that thread about the great price on the LEM 5# stuffer. That's what I have, and it's a fantastic piece of equipment. That price is a steal.

I've been thinking about it for a while. The only problem is that I'm the only one that would eat it. I looked at that stuffer. What kind of grinder to you have? We have a kitchen aid and I thought about getting the attachment for that.

Nice pictorial! Makes me want to take the step of getting a similar setup. Out of curiosity, how long would cleanup take for a job like you did?

We were pretty much cleaning all day as we went, but it still probably took us 20-30 minutes to clean at the end. Most the equipment breaks down for easy cleaning. Inside the rotating part on the stand mixer is the only real headache.

Good eye! Yes, I have a Fujiwara petty. Great sausage knife. It saw a lot of action today. Nice point for popping air bubbles, made quick work of casings and string, and even great for cubing and trimming meat for the grinder.
 
Proud papa tonight. Had some pasta with home made sauce. Whole dinner was cooked by my son, Julian.. Start to finish. Used some if the spicy Italian we made, and some of oifmarine's guacinale. He was pretty pleased with himself. Dad's sauce is his favorite, and now he can make it.
