Grilled Calamari

I've made this before, but it's been awhile. I don't run into decent calamari very often out here, in the middle of nowhere. lol

The calamari were already cleaned and ready to cook.

I sauteed some scallions, onion and garlic in butter, then added seasoned bread cubes, chicken stock, cayenne and seasonings...

Cooled the stuffing before filling the tubes...

Drizzled with olive oil before sprinkling with seasoning. I went with Kent Rollins original this time.

marinated the tentacles in olive oil, coarse salt and cracked black pepper... and garlic. heck, I think that was all...

Since the stuffing is cooked, I shoot for about 3-4 minutes per side...

Built a salad...topped with a red wine vinegar, olive oil, dijon, garlic, scallion, dressing....

I know calamari isn't for everyone, but I like it every so often. lol

I'm liking the seasoning. It's pretty good! I have the mesquite too but haven't tried it yet. Rollins reminds me of one of my ranch neighbors. lol
 
Yes, ma'am! I tell ya', those calamari get awful small by time they reach our part of the country... :roll:

Oh gosh darnt already, just marry me! Your cooks are killing me!!! Jeanie that is just an awesome cook as usual. Your other half has to be a 400 Lbs person and quite happy. You never cease to amaze me on your simplicity but authentic and fresh simple ingredients, I tend to go over the top, I look up to to you for bringing it back to the basics again. Another meal that is simply over the top.. Go girl!!!

Reminds me of dish at a Thai restaurant in SF....right up until you dropped it on a salad anyway ;-)
