After 20+ years, finally need to get serious, help please

I just upgraded to a Backwoods Smoker this year and have no complaints. It will do everything you listed above with ease. https://www.backwoods-smoker.com/

I wish I would have picked up a Backwoods years ago instead of fighting the process with my cheap offset. The Backwoods holds temps great and is crazy efficient on charcoal for the long cooks.

Pretty set on no pellets. After all these years I want to do either stick or charcoal.

I'm not against vertical but not too keen on going back to a water pan.

That KC deal is tempting

Plenty of the verticals don’t need water.

Between the offset and the vertical, you need to decide if you want to attend the fire throughout the cook or not.

Thanks everybody but the decision has been made for me.........we were gifted a free 120g tank, literally out of the blue, the owner didn't even know we were looking.

I was feeling pretty lazy but I can't see not building our own now. Time to break out the welder I guess!

Awesome! Don’t worry about wood consumption. It takes a lot less than you might think.
