Is it just me or does anyone else find tending a small fire more difficult than a large! Crazy, I can tend a large fire and smoke a brisket for 14 hours with no issues.But this damn small fire (making Jerky ) is a pain!
 
Depends on the smoker, really.

On a COS, definitely.
 
A fire basket is your friend. Painless.

Run and OK Joe Highland. I consider that a small fire (box). It does need tending but not overwhelmingly so. You need to get in the mind set before the smoke.
 
For jerky making in my stick burner I use a modified snake in the fire box. Keeps temps low for a few hours to add plenty of smoke flavor. Then I move to the oven to dry.
 
Small fires require a lot more tending for me. I cut the splits really small and feed more often when I do bacon & sausage. I no longer do jerky 'cause the only thing that makes me stop eating it is when it's gone. :oops:

Also, once my offset is warmed up it holds temps like a champ, so you'll see whatever temp & think you have a fire going, only to find a few smoldering coals. left. I have found that cooking 250 and over requires less attention.
